Oatmeal cookies with dried cranberries &
I made these yummy cookies today and I give them my stamp of approval.
I thought I would share!
(enlarged for you to drool over)
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned oatmeal
1/2 teaspoon baking soda
8 oz. (2 sticks) of unsalted butter, softened at room temperature
1/4 cup granulated sugar
1 cup packed light-brown sugar
1 teaspoon salt
1 teaspoon pure vanilla extract (I use pure mexican vanilla extract. expensive, but worth it!)
2 large eggs
8 oz. white chocolate chips
1 1/2 cups dried cranberries (or craisins)
1. Preheat oven to 350 degrees. Mix flour, oatmeal, and baking soda in a medium bowl and set aside. In large mixer, cream butter and sugars until light and fluffy. Reduce speed to low. Add salt, vanilla, and eggs, and beat until well combined, about 1 minute. Add flour mixture gradually, beating until just combined. Stir in chocolate chips and craisins. Cover, and refridgerate until cold, about 30 minutes.
2. Drop heaping tablespoons of dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake until cookies are golden brown around the edges but still soft in the middle. about 13-15 minutes. (They may look a little undercooked but thats the secret to getting soft cookies) Let the cookies cool on baking sheets for 2 minutes, then transfer to a wire rack to cool. Keep the cookies that you don't eat all at once, covered so they stay fresh. (You just might want to eat them all at once!)
---You could substitute the dried cranberries with any dried fruit. Dried apricots are great too! ENJOY!
